Once again a very good video. The only confusing part for me is that you say, use solid copper cable in the walls, however in your diagram it shows CAT5e, and I can’t seem to find CAT7 solid copper cable. Will I still be future proof if I use the CAT5e solid copper int the wall and CAT7 from the termination to the server?

If you are running any data lines (electrical not optic) next to power lines i would always recommend running a shielded cable or if you want utp at least separate them with metal tubing(flex or hard) especially if you are running a high current in the lines since there is strong em field radiating from them. Also if you can they should always be separate i think there is even a standard for running them separately but usually people just want to save some time and space by running them together out of ignorance.

In my most recent install we went with a spoke and hub design. Each floor has a 32 port switch with 4 10G fiber ports (SFP) The main telecom center had a Layer 3 D-Link switch that the fiber plugged into and the service from the local telco connected in at the layer 3 switch. I ended up with a single 10G port on the Layer 3 switch and I placed my NAS onto that port with a fiber single mode sc/APC connection. All fiber was Single mode APC polished terminations connectors giving me the absolute best connection and best performance. I ordered pre-terminated fibers. and went with a 4 inch conduit between floors so I can run speaker, CCTV and security and lighting control through the same conduit between floors if needed in the future. Each floor has a small telecom wall mounted rack (12u) that the floors cables come into and terminate there. There is a closet in the main hall way on each floor that the wall mount rack cabinet go into and the conduit runs through. It is more expensive since I now have four switches and the layer 3 switch is definitely more expensive but it also acts as my wi-fi controller as well. Wi-fi access points are located centrally on each floor and my office for a total of four. Phone runs on the network as voip and there are 8 CCTV cameras with ports available for four more cameras on each floor and two ore externally. total cost is about 10K for wire and equipment and another 10K for labour (Which I saved by doing it myself). This gives me smaller surface areas for failures (The runs of cable are shorter and more easily traceable) and the network is less likely to be taken down by a single point of failure.
